When the iconic Rosa damaskena blooms in the Rose Valley, the skirts of Sredna gora turn purple. The aroma of the delicate and beautiful lavender, combined with the fine nose of the elegant wines from the Chirpan region descend over the Thracian field, as if to welcome all of us who go there to celebrate Bulgarian lavender and wine at the beginning of summer.

On June 14 and 15, we are going to Thrace – a beautiful and traditional Bulgarian region with the production of wine and lavender. Beneath the gentle green hills of Sredna Gora winds a lavender route dotted with neat new wine cellars. We will experience two wonderful days through the endless purple fields during the lavender harvest, through the old vineyards with wine varieties characteristic of the Chirpan and Starozagorsk regions, we will visit and taste the wines in four elegant wineries, each of which has its own look and style.

One of the cellars is in the Chirpan`s village of Sredno Gradishte, where nearly 100 years ago one of the first experimental lavender plantations in Bulgaria was created. In the small village, remarkable for its old stone houses, there is also a lavender and rose oil distillery, where they will also welcome us and show us how Bulgaria is deservedly at the forefront of the world in lavender oil production.

Stara Zagora – The city of linden trees, awaits us with its antiquity – Roman ruins from the time of Augustus Trajan, as well as Ayazmoto Park, related to the legends that Prince Boris I converted to Christianity here. We will also have lunch on a green meadow with farm cheeses, homemade bread, butter and pink tomatoes.

What to expect?

The tour “Let’s celebrate the Bulgarian lavender at the foot of Sredna Gora!” is a beautiful journey among the aroma of lavender fields in the Chirpan region. At the foot of Sredna Gora, in the Chirpan`s village of Sredno Gradishte, nearly 100 years ago were created some of the first experimental lavender plantations in Bulgaria.

The regions of Chirpan and Stara Zagora are among the most favorable for growing lavender. Lavender plants, planted almost a century ago, still grow in Sredno Gradishte. In Bulgaria, there are already a total of over 136,000 decares planted with lavender, with an average annual yield of over 51,000 tons. Our country annually exports about 200 tons of high quality lavender oil. France is second with an average yield of 40-50 tons.

Therefore, along with the rose, recently declared part of the cultural heritage of UNESCO, a symbol of the beauty of our country is lavender. Now is the time to enjoy its wonderful beauty and aroma, to pick from the delicate flowers directly from the gardens near the Chirpan village Sredno Gradishte, to try honey from lavender, to see how lavender oil is extracted, to visit for tasting four local wine cellars that turn the region of Sredno Gradishte, Mogilovo, Zmeyovo, and Oryahovitsa into the newest wine destination in Bulgaria. We will also walk in the City of Limes, where, they say, Prince Boris I converted to Christianity, we will also explore the Roman part of the history of Augusta Trayana.

Day 1: The purple magic of the lavender fields at the foot of Sredna Gora

The program begins with a visit to the lavender fields near the village of Sredno Gradishte, where the first lavender gardens were planted almost a century ago for the first time in Bulgaria. After gathering from the fragrant plant, learning what it is useful for, and taking pictures, we will head to the center of the village of Sredno Gradishte, where lavender and lavender oil are especially revered. We will visit the local distillery for lavender oil production and will have a presentation tour. We will have lunch with farm food – different types of farmer`s cheese, yellow cheese, pink tomatoes, buttermilk, “white husband” and others, produced by artisan cheese master Mina Vardzhieva and served in nature on a green meadow at the foot of Sredna Gora.
In the late afternoon, we will leave for the village of Mogilovo, where we will have a beautiful wine tour and wine tasting in the wine cellar “Midalidare Estate”.
Overnight in Stara Zagora.

Day 2: The secrets of Augusta Trayana

We will walk through the ruins of Augusta Trayana and learn the Roman history of Stara Zagora. Next is a walk to Ayazmoto Park, related to the legends that Prince Boris I accepted Christianity here. The park was established on February 28, 1895, by Metropolitan Metodiy Kusev. For its afforestation, he collects seeds of various trees from Orthodox monasteries and church communities in different parts of the world. We will visit the church “St. Theodore Tyrone” near the Stara Zagora diocese at the entrance of Ayazmoto, where there was a monastery in the Middle Ages.

This is followed by a three-level wine tasting at the “Oryahovitsa” winery, established in 1936. The wines reflect the natural characteristics of the special terroir in the village of Oryahovitsa.

A special lunch with farm products and a five-course wine tasting will await us at the “Better Half” cellar in the village of Zmeyovo. The cellar is named after Mount Better, which millions of years ago was the crater of a volcano.

Some of the wines are made in small steel vessels using modern technologies, but the classic approach, established over the centuries, is also used – the wine ferments and matures in clay eggs, kvevri, doliums.
